Nopales Salad

A springtime cactus salad recipe from Rivenrock Gardens.

2 to 6 nopales cactus paddles
1/4 cup olive oil
1/2 onion, diced
1 clove diced garlic
1 or 2 clumps diced cilantro
1 Tbsp dried crumbled oregano
1 cup of sweet corn kernels
Salt and pepper

Toss all ingredients together and let stand in the fridge for a bit to blend the flavors.
